Three papers by Pasteur as selected for the Harvard Classics. The Physiological Theory of Fermentation, from his 1876 studies of beer, shows that fermentation is the work of living micro-organisms rather than a purely chemical process. The Germ Theory and Its Applications to Medicine and Surgery, read to the Academy of Medicine in 1878, connects these microbes to disease and to Lister's antiseptic surgery, and Extension of the Germ Theory in 1880 applies it to further diseases, including chicken cholera and the first attenuated vaccine.
